Also, anyone who says that turkey is dry and boring has never had a properly prepared one.<\/p>\n<p>Anyway, here goes, recipes included.<\/p>\n<p>Brine a turkey in the following&#8230;.<\/p>\n<p>4c water<br \/>\n1\/4c Kosher or other large crystal salt<br \/>\n1 T rosemary leaves<br \/>\n20 sage leaves<br \/>\n1 T herbs de Provence<br \/>\n1\/4c dark brown sugar<br \/>\n1\/2c maple syrup<br \/>\n1 t olive oil<\/p>\n<p>Boil brine mixture until oil is absorbed by herbs. Cool. Add turkey and water to cover.<br \/>\nPlace in fridge and let soak for 1-5 days. Longer means stronger flavor.\u00a0Five days is realistically the limit.<br \/>\nTurn turkey over in brine daily.<br \/>\nPrior to roasting, remove from brine.<br \/>\nStrain brine and tuck strainings under turkey skin.<br \/>\nRoast turkey at 400F for 15 min, then reduce temp to 325F and roast until done.<\/p>\n<p><a href=\"https:\/\/atomicalex.com\/wp-content\/uploads\/2014\/12\/IMG_1582.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-1255\" src=\"https:\/\/atomicalex.com\/wp-content\/uploads\/2014\/12\/IMG_1582-1024x768.jpg\" alt=\"IMG_1582.JPG\" width=\"627\" height=\"470\" srcset=\"https:\/\/atomicalex.com\/wp-content\/uploads\/2014\/12\/IMG_1582-1024x768.jpg 1024w, https:\/\/atomicalex.com\/wp-content\/uploads\/2014\/12\/IMG_1582-150x112.jpg 150w, https:\/\/atomicalex.com\/wp-content\/uploads\/2014\/12\/IMG_1582-400x300.jpg 400w, https:\/\/atomicalex.com\/wp-content\/uploads\/2014\/12\/IMG_1582.jpg 2048w\" sizes=\"auto, (max-width: 627px) 100vw, 627px\" \/><\/a><\/p>\n<p>Gluten-free crust &#8211; modified AHA<\/p>\n<p>2c Pamela&#8217;s Artisan Flour Blend<br \/>\n3t baking powder<br \/>\n1\/2 t salt<br \/>\n1\/2 to 3\/4c water<br \/>\n1\/2c oil<br \/>\nMix drys, add water and oil and blend. Add water as neede for texture.<br \/>\nMakes three crusts<\/p>\n<p>Apple Pie<br \/>\nOil crust as above<br \/>\n6\u00a0Ida Red apples, peeled and sliced thin<br \/>\nCinnamon<br \/>\nFlour as needed.<\/p>\n<p>Layer apples into lower crust with flour and cinnamon. Top with upper crust.Bake at 350 until done.<\/p>\n<p>Pumpkin Pies<\/p>\n<p>Filling &#8211; use the Libby recipe, it rocks<\/p>\n<p><a href=\"https:\/\/atomicalex.com\/wp-content\/uploads\/2014\/12\/IMG_1581.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-1254\" src=\"https:\/\/atomicalex.com\/wp-content\/uploads\/2014\/12\/IMG_1581-1024x768.jpg\" alt=\"IMG_1581.JPG\" width=\"627\" height=\"470\" srcset=\"https:\/\/atomicalex.com\/wp-content\/uploads\/2014\/12\/IMG_1581-1024x768.jpg 1024w, https:\/\/atomicalex.com\/wp-content\/uploads\/2014\/12\/IMG_1581-150x112.jpg 150w, https:\/\/atomicalex.com\/wp-content\/uploads\/2014\/12\/IMG_1581-400x300.jpg 400w, https:\/\/atomicalex.com\/wp-content\/uploads\/2014\/12\/IMG_1581.jpg 2048w\" sizes=\"auto, (max-width: 627px) 100vw, 627px\" \/><\/a><\/p>\n<p>Cambric GF stuffing\/dressing (You&#8217;ll figure out the name if you&#8217;re over 40)<br \/>\n2 loaves Sch\u00e4r multi-grain bread, cubed and dried<br \/>\n2 sticks butter<br \/>\n1.5# mushrooms, chopped small<br \/>\n1 head celery, chopped<br \/>\n1 medium onion, chopped small<br \/>\n1 clove garlic, diced (add as many as you want, really)<br \/>\n2 apples, chopped small<br \/>\nFresh sage, rosemary, and thyme<br \/>\n1 qt chicken stock<br \/>\na shot of Sriracha for the stock if you are so inclined<br \/>\n1T mushroom base for stock<\/p>\n<p>Preheat oven to 350\u00b0F.<br \/>\nMelt butter in bottom of large stock pot.<br \/>\nAdd mushrooms and saut\u00e9 until soft.<br \/>\nAdd vegetables and saut\u00e9 until clear.<br \/>\nAdd apples and saut\u00e9 until aromatic.<br \/>\nAdd herbs and saut\u00e9 until aromatic.<br \/>\nAdd stock and additions and cook until warm.<br \/>\nSpray a casserole with cooking spray.<br \/>\nEvenly spread out bread cubes in casserole.<br \/>\nPour stock\/veggie mix over bread cubes and mix up well.<br \/>\nAdd water as needed to wet out all bread.<\/p>\n<p>Cover with foil and bake until the texture is where you like it. Hotter oven (400\u00b0F) for more crispies. Remove the foil to improve crispies, leave it on for squishies<\/p>\n<p>The stock\/veggie mix can be made up ahead of time and kept cold until needed. But be prepared to reheat it first. The butter solidifies things and you need it in the bread, not in the veggies. Otherwise the texture of the final product will be crap.<\/p>\n<p>Cranberry sauce<\/p>\n<p>1 bag cranberries<br \/>\n1 orange<br \/>\nWater<br \/>\nSugar to taste ~1T<\/p>\n<p>Zest orange and reserve zest.<br \/>\nPeel orange and peel sections.<br \/>\nPlace cranberries and orange sections into saucepan.<br \/>\nBarely cover with water.<br \/>\nSimmer until cranberries have burst.<br \/>\nAdd orange zest and stir well.<br \/>\nTaste test and add sugar to taste.<br \/>\nRemove from heat and chill.<\/p>\n<p>Sweet potatoes<\/p>\n<p>Peel and slice in 1.5cm thick slices.<br \/>\nBoil until soft.<br \/>\nFry in butter until browned.<\/p>\n<p>White potatoes (as opposed to yellow)<\/p>\n<p>Idaho russets<br \/>\nChop and boil until soft.<br \/>\nMash with sour cream and butter.<br \/>\nSalt to taste.<\/p>\n<p>Green beans<\/p>\n<p>Parboil green beans until color has just barely turned, about 5 minutes at boil.<br \/>\nFry in butter left over from sweet potatoes until beginning to brown.<\/p>\n<p>Serve the whole mess with a nice Malbec.<\/p>\n<p><a href=\"https:\/\/atomicalex.com\/wp-content\/uploads\/2014\/12\/IMG_1584.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-1253\" src=\"https:\/\/atomicalex.com\/wp-content\/uploads\/2014\/12\/IMG_1584-1024x768.jpg\" alt=\"IMG_1584.JPG\" width=\"627\" height=\"470\" srcset=\"https:\/\/atomicalex.com\/wp-content\/uploads\/2014\/12\/IMG_1584-1024x768.jpg 1024w, https:\/\/atomicalex.com\/wp-content\/uploads\/2014\/12\/IMG_1584-150x112.jpg 150w, https:\/\/atomicalex.com\/wp-content\/uploads\/2014\/12\/IMG_1584-400x300.jpg 400w, https:\/\/atomicalex.com\/wp-content\/uploads\/2014\/12\/IMG_1584.jpg 2048w\" sizes=\"auto, (max-width: 627px) 100vw, 627px\" \/><\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yeah, I should have posted this earlier, but Thanksgiving was a drawn out affair this year.
